Quick Skinny Lettuce Wrap Recipe under 500 calories with over 50g of protein!November 5, 2015 • By Jessica
Ok, do you have those nights where the kids are running to and from practices or you only have 15 minutes before you have to get to a yoga class or group run? Or you just don’t want to spend 45 minutes prepping a meal that will take 5 minutes to consume? Then, this is for you.
And this isn’t quite a “recipe” as much as it’s throwing together stuff. But people want to know what I eat and how I eat healthy, and some days, it’s like this. Do you like lettuce? Do you like veggies and whole grains? Do you like chicken? (if you don’t you can just throw the veggies in the lettuce, too)…. if so, keep reading.
- 4 chicken breast tenders (we made two extra for the kids) or about 12 oz. of chicken that you’ll dice up once it’s cooked
- 1 tbsn salt and pepper
- 1/2 tbsn garlic powder
- 1/2 tbsn onion powder
- lettuce leaves
- Bird’s Eye Protein Blend California Style Frozen Bag 10.8 oz bag
- Kikkoman low sodium soy sauce (as topping)
- Kikkoman sweet and sour sauce (as topping)
Directions: prep time 2 min, cook time: 8 min, difficulty: easy
Spray skillet with noncook spray. Add your chicken tenders and sprinkle half of your spice mix (salt, pepper, garlic powder and onion powder) evenly over the top side of the tenders. Turn stove top burner to medium heat and cook for 8 minutes, flipping at half way point and spreading rest of spice mix on opposite side. Remove from heat and cut chicken into bite size pieces for the lettuce wraps.
Microwave the Bird’s Eye California Style blend according to the directions (4:30 minutes for our microwave) and let sit for a minute before opening. During the heating process, peal lettuce leaves and set aside.
(if you are a vegetarian, you can just microwave the mix and put in lettuce and add your sauce and eat)!
To serve: mix your 4 cooked tenders (diced) with the cooled down veggie blend mix, and serve onto lettuce leaves. Mixture should make 4 generous lettuce wraps. Top with soy sauce or sweet and sour sauce.
