Does your family love fish tacos? But you are trying to incorporate fewer carbs and veggies into your diet? Well, if so, this is the recipe for you. Bear with me as I made this one up on my own (having made zucchini boats using ground turkey from other websites and having tried them using other fillers, I knew it wouldn’t be tough, but I wasn’t sure how these would taste), but this was one of those nights where I literally had no corn or wheat tortillas and had only tilapia (as far as a meat option) yet had quite a few veggies to pick from. So here is what I threw together. I made this for 2 so I’m multiplying my ingredients by 2 to have it serve for 4. (3 tilapia filets was too much – learning curve). These are healthy, but with the avacado on top, they do add more fat, albeit unsaturated fats. So give them a try!
So I love Skinny Mom Recipes! They are healthy and usually pretty easy. I’ve been wanting to try a skinny enchilada recipe because Dustin loves enchiladas but hates how unhealthy they are and I don’t like cheese so I was hoping a skinny recipe would be light on cheese, but still loaded with Mexican flavor. This recipe was awesome for exactly that.
This past week we made Gimmesomeoven’s garlicky baked shrimp recipe (originally from Real Simple magazine) but substituted equal amounts applesauce for the butter that it called for. It was a tad sweeter than I expected, but super yummy, and VERY healthy! We served it over whole wheat pasta and had a side of veggies but they would also be good all mixed together! Everyone loves the ease of crock-pot cooking and I’m no different. Dustin and I enjoy the smell of the house, too!!! This cooler weather had us in the mood for chicken soup, so we came up with this chicken and brown rice recipe by tweaking a few we found online. It turned out amazing and we had enough leftovers for 2 days (it made 8 servings)! This is a low sodium soup, has lots of veggies which I love, not to mention it tasted way better than store brands!
